Butternut Squash Soup

This is a great tasting, low calorie, low fat recipe for a butternut squash soup that will not only taste great but keep you full. The recipe below contains 4 servings with each containing only about 150 calories.

You really need to try this soup to appreciate how filling it feels. It is perfect for a low calorie lunch or afternoon snack.

Ingredients

1 Butternut Squash
1 Carrot
1 Tomato
1 Large Potatoe
1 Clove of Garlic
1 Courgette
Salt
Vegetable Oil

Recipe

Wash and peel all the vegetables and slice into 1-3cm width chunks

Peel garlic glove

Add all ingredients to saucepan

Add water so that all the vegetables are just covered

Add salt to taste

Add 1 table spoon of oil

Simmer on a low heat for 30-40 mins (checked all vegetables are soft before blending. If not then cook for longer)

Take off heat and blend until smooth

Serve and enjoy!
